Sunday Food Prep in Pics

I'm all about making my week as easy as possible when it comes to cooking.  Every Sunday I spend some time (3 hours yesterday!) in the kitchen prepping food and getting things ready. A lot of things I'll portion out for a few days so I just have to grab containers before I run out the door each morning. I usually make/portion out enough for a few days then package up some more on Wednesday for the back half of the week. So, this is what my Sunday afternoon looked like yesterday...

I made a batch of TJ's Triple Berry Bran muffins to keep on hand. I store them in the freezer and grab on the go as needed. They are really good and have 7g of fiber per muffin. Perfect not-too-sweet treat and they keep really well when frozen.

I always have hard boiled eggs made. I usually make at least a dozen for the week but these are all the eggs we had. One of my favorite lunches right now is egg whites on toasted Ezekiel with a laughing cow cheese and salsa.

I peel and cut a pound of carrots each week to snack on with lunch.

Always have a can of pure pumpkin ready to go for my oatmeal each morning. And for some reason my camera doesn't like orange pictures, it rotates them on it's own.

We've been shopping at Produce Junction so we end up with large quantities of produce. This is just part of our shopping trip yesterday. Beans are cut and ready to be cooked later in the week. I used the zucchini and mushrooms to make...


In the pan, one large onion, zucchini and shrooms with some pepper and spices. This will be one* of my veggies at lunch (*I always eat 2 veggies at lunch time).

Four servings of bulgar, made with just water. Will either be a side with dinner or an afternoon snack.

Steamed broccoli....I can't get enough broccoli and brussel sprouts. There's rarely a day that goes by where I don't have one, if not both, of them. Produce Junction was out of brussel sprouts so that's the only reason they aren't pictured. I'll make due with steam fresh ones this week.


Then I used these ingredients to make some granola bars. Oats, almonds (chopped), TJ's all natural peanut butter, chia seeds, pumpkin seeds, cinnamon, agave, vanilla extract and skim milk.

This looks waaay bigger than it actually is. I cut 8 small bars out of this and usually grab one on my way out the door in the morning to the gym.

Then I always make a big enough dinner on Sunday to get us a few nights. It makes it so much easier when I get home from work if I don't have to spend an hour plus cooking. This Sunday...turkey chili.

And a veggie side for dinner, of course. We had some spinach we needed to use up so I sauteed some onion (we have a slight obsession with onion in our house, we could eat just this below with nothing else in it).

And it turns into this little bit! This is why I hate cooking spinach...where did it all go?? We usually eat it raw but since this stuff needed to be used asap, I had to cook it.

We have a lot of other staples on hand ready to go to complete our "clean" meals each day and we'll make chicken, fish, quinoa and rice at some point during the week for our remaining dinners. Maybe next up I'll post pictures of what I bring to work each day. You would think I'm feeding a small army.

Hope everyone had a great weekend. I had a chafed filled 20 miler on the treadmill Saturday. Joy.

Edited to note that Andy helped with a lot of the chopping and he washed every single dish for me. He definitely earned his keep for the week.

Great post. I really need to eat more veggies! This winter I've learned that I occasionally chafe on treadmill runs but I NEVER have outside no matter how warm! Something about the repetitive motion on the 'mill.

I love food posts! I love doing a ton of prep on Sunday too... makes it so much easier to get through the week. Thanks for sharing! And I would love to see the eats you pack to bring to work for the day! I get teased like crazy for my massive lunch bag.

I try to prep everything from breakfast to afternoon snack for the week on Sunday. This just makes everything go so much easier in the morning since I try to cram way too much into a small amount of time before I walk...rather dash...out the door! Those bars look great! Where did you get the recipe?

Love seeing this! I am pretty good with planning everything but sometimes get to Thursday and just want someone else to put everything together...

Such a smart thing to do! And you just brought back big memories for me with Produce Junction! Used to hit it all the time when I lived in the Phila. suburbs!

Great way to plan your week. I love to cook and bake so most nights, even after working all day, cooking is my relaxing time. But sometimes, I really wish I had done what you do - made dinner so reheats and leftovers could take us through. Great idea.
What do you put in the bulger for flavor?

Great post - I love your ideas! I try to do the same every week, but am not very good at it yet. I am going to try the spinach and onions. We love onions at my house, and I never know what to do with leftover spinach! Thanks!!

p/s: I hope your heel is nothing too! I noticed mine is only "bad" in the morning -- I almost never feel it when I'm running, unless my form starts deteriorating and I'm not careful with how I step.
